Orange, tomato & parsley salad with celery seeds & green chilli

4 oranges
2 ripe tomatoes, finely chopped
½ bunch flat-leaf parsley, leaves only, chopped
2 green chillies, finely chopped
2 teaspoons celery seeds
1 clove garlic, finely chopped
100 ml extra virgin olive oil
½ lemon, juiced
30 ml sherry vinegar
½ red onion, finely chopped
sea salt and freshly ground black pepper


Finely grate the zest from one orange, then remove the pith and cut into segments. Peel and segment two other oranges. Peel and cut the remaining orange into rounds (pith on) and then into small triangles.

Place the orange zest, segments and triangles in a bowl with the remaining ingredients. Season to taste and toss gently.

Allow to rest for about 15 minutes before serving.
